Souse vide swordfish w/ a morel and English pea Beurre blanc sauce, plated atop pureed parsnips, accented with microgreens. Head-on shrimp spicy shrimp with a creamy white wine and andouille sausage. /2

Beurre blanc - Instead of mustard, I used whole cardamom and coriander seeds - added depth and complexity but was subtle. Coconut puree - I used coconut cream with lemongrass, roasted the parsnips to get the flavors out, added into the sauce, cooked down more, blended. /fin
